Banana Snickerdoodles

​Not going to lie, I have been working on this recipe for a very long time. I love snickerdoodles, and what I like the most about them is that you can bake a batch in every flavor imaginable. My boyfriend loves banana cookies (and banana cake, banana bread, banana pancakes...), so I knew that I had to create my own version of banana snickerdoodles. I’m proud to say that after weeks in the making, it’s finally here: my banana snickerdoodles recipe!
These cookies are soft and chewy, and they taste just like banana bread, with an added hint of cinnamon. They are great as an afternoon snack (if you’re the cookies-are-a-snack type of person) or as a light dessert after a summer meal. Obviously, my personal favorite way of enjoying these is dipped into a steaming cup of tea after a long day. Whatever floats your boat!

Extra tips:
  • I used three small bananas, but 2 medium or big ones would work too.
  • For the cinnamon sugar, simply mix granulated sugar (approximately 1/2 cup) and sprinkle a little bit of cinnamon on top. Use a fork to combine the two. You can always make more as you go, if needed.
  • I like to use a hand mixer to cream the butter and sugars. It’s faster and it also guarantees that the sugar will be completely dissolved.
  • Since this dough is pretty sticky, I recommend wetting your hands when forming the cookies. That’ll keep the dough from sticking everywhere.

​I hope that you guys enjoy this recipe. I also want to take a moment to address the fact that there hasn’t been a new blog post for the past couple weeks... I aim to post every other Sunday, but these are strange times we live in, and I think we’ve all been a bit overwhelmed. I’ve been feeling anxious, I’ve been sleeping a lot, I haven’t been as active – and you know what? That’s okay. I’ve given myself permission to rest when I need, and I hope that you’re all able to take time for yourself as well. I definitely want to get back to a more regular schedule, so I hope to see you in two weeks. However, I feel like the priority right now is to take care of ourselves and take care of the people around us. Be patient, be kind, and stay strong. I love you guys.
