Maple Cookies

My family definitely has a sweet tooth. Growing up, I always saw my parents baking desserts, or indulging in a pastry with their morning coffee or after dinner. I definitely inherited that sweet spot for dessert.
My dad especially loves maple syrup. He’s always joking that we should put maple syrup. On. Everything. For Father’s Day, which is coming up, I wanted to create a dessert that would represent him and everything he loves. Of course, it had to be some sort of cookie, since my dad and I are real life cookie monsters.
Maple syrup + cookies = maple cookies.
These are surprisingly light, just sweet enough and they’re great with coffee or tea. The perfect dessert after a day spent in the sun, working in the backyard, like my dad always does.

Maple Cookies

Light, meringue-like cookies made with maple butter and topped with maple flakes. These will satisfy any sugar craving.
Ingredients:
  • 1 cup maple butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 ¾ cup flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • ½ tsp salt
  1. Preheat oven at 350˚F. Line a baking sheet with a silicone baking mat.
  2. In a small bowl, toss together the flour, cream of tartar, baking soda and salt. Set aside.
  3. In a large bowl, using a hand mixer, whisk the maple butter on its own to soften it.
  4. Add the eggs, one at a time, and the vanilla extract.
  5. Add the dry ingredients and blend.
  6. Roll the dough into balls (I used about 1 tsp of dough for each ball) and lay them out on the baking sheet. Flatten them slightly with your fingers.
  7. Sprinkle maple flakes on each cookie, lightly pressing them down.
  8. Bake for about 8 minutes.
  9. Enjoy with your dad, on the patio.

Extra tips:
  • When adding the eggs, make sure to whisk between each addition, to give them a chance to emulsify.
  • Be careful not to overmix the dough, as it would make your cookies really hard.
  • Because the dough can be quite sticky, it helps to have slightly wet hands when flattening each cookie.
  • Pressing the maple flakes down onto the cookie will help them stick to the dough. These cookies cook very fast and once they become crispy, there’s no way for the flakes to stick.
  • These cookies don’t turn golden, so don’t wait on a change of color to take them out of the oven. Instead, insert a toothpick in the middle of one cookie. If it comes out clean, it is ready to be enjoyed.
